I have a really tough job. I realized this the other day as I packed up my notepad and camera and headed to one of the roughest assignments ever… to sit and visit with one of my favorite couples…and then to have to sample one of the exquisite dishes that she is famous for in these parts of the “woods”. Lolol, tough… well, obviously not. It was a magnificent afternoon and I had the honor of spending time with Jack County’s “famous” couple (of 54 years) Floyd and Frances Easter!
Frances graciously accepted the challenge of being the June Kitchen`ista, for which we will all be happy that she did! Frances has quite a reputation for her skills in the kitchen, and people from all over the county are quick to throw her name in the hat when our top cooks are being discussed. Much to the delight of many, not long ago Frances gathered her favorite recipes together and published them in a wonderful (and handy) cookbook called “Recipes to Remember…Favorites of Family and Friends”. Her book has recipes from main dishes to desserts and lots in between. Sold at the Vintage Vault and through Frances herself (as well as her “promoter, Floyd) these are books that everyone needs in their kitchen!
I asked Frances to describe her favorite time to cook. Both she and Floyd were quick to talk about a tradition they have been doing for some time, the Big 4th of July Breakfast, held at their home (and 3 years ago it was held IN their home, due to rains that had settled in. That year they served around 100 people, give or take, inside their beautiful ranch style home!) Frances also stated “I enjoy cooking for dinner parties too. Those that are a bit more formal. Those are fun to host”. But when it comes right down to it, Frances’ dishes and desserts can be found at many a function. Be it church, museum events or simply cooking a family meal (with 2 sons, 2 grandchildren and 2 great-grand kids, the family finds it important to spend time enjoying each other) Frances has an endless supply of good recipes that is sure to bring smiles on the faces of those attending.
So, sit back and enjoy! Our June will start with a main course of Chicken Spaghetti, and trust me…this is the top of the line recipe! It was a sacrifice, but I took one for the team and left hungry for more! And so will you!
